Roasted Tomatoes

With summer upon us just wanted to give you a nice, simple recipe for a salad that is kick-ass.  I am a fan of a tomato, mozzarella, and basil salad.  But let’s take it too another level shall we?

Take six tomatoes.  I use plum, but any will do.  Better if they’re from your garden.  Place in a bowl or on a cookie sheet and drizzle with olive oil.  Make sure to rub the oil all over each tomato.  Place on your grill over medium heat.  Turn as appropriate.  You’ll know you’re doing it right when the skin begins to char a bit and peel.  When finished your can either remove the skin or keep it in place (for this salad I like to keep the skin).  Slice into nice tomato circles when cooled.  Slice mozzarella (about one pound) the same way and arrange on a plate overlapping each other.  Sprinkle with chopped fresh basil (ten leaves or so).  Season with olive oil, a little bit of balsamic, sea salt and pepper.
